This time of year there are treats all around us!!!! There are so many recipes that are healthier options and taste delicious. When I first started on my journey 13 years ago, I went on the look for healthier options for treats and found so many!! Here are few of them to enjoy this holiday season.

Jack-O'-Lantern Protein Balls.

Ingredients

  • ¾ cup all-natural smooth peanut butter
  • ¼ cup pure pumpkin puree
  • ¼ cup raw honey
  • ¾ cup dry old-fashioned rolled oats
  • ½ tsp. ground cinnamon
  • 2 Tbsp. mini chocolate chips
  • 12 small pretzel sticks, each broken into 2 pieces

Instructions

  1. Combine peanut butter, pumpkin, honey, oats, Shakeology, and cinnamon in a medium bowl; mix well with clean hands or a rubber spatula.  
  2. Shape mixture into twenty four walnut size balls.
  3. Arrange chocolate chips in protein balls to resemble jack-o'-lantern faces. Stick a pretzel piece into the top of each protein ball to make a stem.
  4. Place in airtight container; refrigerate for at least 1 hour before serving.

Chocolate Chunk Banana Bread

Ingredients

  • 1 1/2 cups whole-wheat flour or oat flour, spelt flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tbsp ground flaxseed
  • Pinch of sea salt
  • 3 ripe bananas, mashed with a fork
  • 2 egg whites
  • 1/4 cup unsweetened applesauce
  • 1/2 cup raw honey
  • 1/4 cup olive oil, avocado oil, coconut oil 
  • 1/3 cup chopped dark chocolate
  • Olive oil cooking spray, optional
Preparation
  1. Preheat oven to 350°F. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, flaxseed and salt.
  2. In a large bowl, with a hand mixer, beat bananas until smooth. Add egg whites and beat until combined. Gradually mix in applesauce, honey and safflower oil.
  3. Mix dry ingredients into banana mixture; stir in chocolate.
  4. Mist a 9 x 5-inch loaf pan with cooking spray. Pour batter into pan and bake for 45 minutes, or until browned on top.
